Soft and delicious keto chocolate sandwich cookies are the perfect treat to satisfy dessert cravings! Low carb and gluten-free, a chocolate cookie sandwich filled with a creamy sugar-free cream cheese filling.
What are your favorite kinds of cookies?
This cookie came about because my daughter was lamenting over the fact she couldn’t have Oreos with all the gluten and sugar. “Well,” I said, “Let’s make our own version!”
It’s so much fun to let kids be creative and really think about what they want as an end product. It turned out, a soft chocolate cookie with a creamy delicious cream cheese filling was really what was on her mind. In fact, that craving turned into one of our favorite desserts, keto chocolate sandwich cookies.
They’re really more of a cross between an Oreo and a whoopie pie. However, after making them many, many times, we much prefer them to either alternative. Why not give them a try?

The Importance of Keto Food Prep
I think you can say it’s important to prepare for just about anything in life. When you make a lifestyle change you want as many advantages in your corner as possible. Therefore food prep is absolutely HUGE when it comes to being successful on a keto diet.
If you’ve read many of my recipe blog posts you’ll know I eat keto, and my daughter eats a slight variation on it for health reasons. My son and husband will eat the meals I prepare but are definitely not strict keto.
It’s difficult to provide good, healthy, whole food options for kids with the barrage of sugar thrown at them every day. The library summer reading program gives coupons for candy bars and ice cream, teachers at school give out candy as rewards, and all picnics and celebrations include candy and gluten-filled sweets.
What can you do? When you’re a kid, it’s even harder to say no to the donut calling your name on the spread at the parade.
Be prepared. For me, that means meal and snack planning every week, with baking and prep time planned into my schedule. If I want to be successful and make good food choices, they have to be easily available right? Moreover, it’s so much easier to ignore the cookies your name when you have a more tempting option available. Like these keto chocolate sandwich cookies.
How to make Keto Chocolate Sandwich Cookies
To make keto chocolate sandwich cookies, there are basically two components. First, make the chocolate cookies. Then whip up the filling. Last, once the cookies are cooled, make sandwiches by filling with the delicious cream cheese mixture.
Therefore, let’s start off with the chocolate cookies. To be honest, I can eat these as treats on their own. However, the filling really takes them up a notch and makes them that much more special.
First, preheat the oven to 275 degrees and prepare two baking sheets with parchment paper or silicone baking mats. Second, get out a large mixing bowl, and put the melted butter in it. Then dump in all the other cookie ingredients but the almond flour. Stir the almond flour in last.
It’s a pretty quick and easy dough to make. Now, form tablespoon-sized balls out of the dough and place them on a baking pan covered with a baking sheet about 2 inches apart. Be sure to flatten them by pushing down on each with the flat bottom of a glass or simply with your hand.
Tip: Almond flours differ, so if the dough seems too dry, you can add in a tablespoon at a time of almond milk. The balls of dough should be able to be pressed down into rounds.
Next, bake at 275 degrees Fahrenheit for 15-20 minutes or until the cookies are done. Also, it’s important to let them cool for a few minutes on the pan to harden. Then you will be able to remove them to the racks to cool completely.
How to make the cream cheese filling
First off, for the filling, be sure the ingredients are at room temperature or even slightly above so they can be completely combined without lumps. Now, place the cream cheese, heavy cream, and powdered sweetener in a bowl. Then, use a hand mixer to completely blend for at least 2 minutes.
Lastly, to assemble! Take one cooled cookie and spread with a good amount of filling, then top with a second cookie. Place it back on the rack or in an airtight container to store. Now repeat until all the sandwiches are filled. Usually, I find it necessary to sample one at this point.
Put the cookies in an airtight container to store in the refrigerator for up to a week or in the freezer for a month. I’m a big fan of having all sorts of options in the freezer to set out for guests or myself in an emergency. Enjoy!
Low carb chocolate cookies
Chocolate cookies are a huge trigger for me so it’s always important to have an option when that craving hits. These cookies are great with the cream cheese filling or why not try to fill them with a good keto ice cream? I don’t think anyone would argue with that!
Share them with friends and family or keep them in portions in the freezer. It’s your choice. Happy baking!
