  • 1/2 cup blanched almond flour finely ground
  • 1/4 cup cocoa powder
  • 1/3 cup powdered sweetener Swerve Confectioner's
  • 1/4 cup almond butter room temperature
  • 5 tbsp melted butter
  • 1/2 tsp almond extract optional
  • 1/2 tsp vanilla extract optional
  • 1/2 tsp peppermint extract optional

Chocolate Coating

  • 3 oz sugar free chocolate
  • 1/2 oz cocoa butter
  • 1/4 cup powdered sweetener Swerve Confectioner's

  • Whisk together the almond flour, cocoa powder, and powdered sweetener in a large bowl.
  • In a medium-sized bowl thoroughly combine the melted butter, almond butter, and your choice of extract until no lumps remain.
  • Pour the butter mixture into the dry ingredients and combine into a dough using a spatula by hand or a mixer.
  • Roll the dough into one inch balls and place on a baking sheet lined with parchment paper or a silicone baking mat. Place in the freezer for at least 30 minutes.
  • Meanwhile, prepare the chocolate coating. Melt the chocolate, cocoa butter and sweetener in a heat-proof bowl over a saucepan of boiling water.
  • Stir continuously until melted and remove from the heat.
  • Place the frozen truffle ball on a fork and dip it in the melted chocolate coating completely. Return the truffle to the baking sheet to harden and continue until all truffles are coated.
  • Place in the refrigerator to set.
