Keto Chocolate Truffles
Candy and cookie making come together in these no-bake decadent yet keto chocolate truffles. Christmas is not the same without a chocolate truffle to bite into and melt in your mouth!

- 1/2 cup blanched almond flour finely ground
- 1/4 cup cocoa powder
- 1/3 cup powdered sweetener Swerve Confectioner's
- 1/4 cup almond butter room temperature
- 5 tbsp melted butter
- 1/2 tsp almond extract optional
- 1/2 tsp vanilla extract optional
- 1/2 tsp peppermint extract optional
- 3 oz sugar free chocolate
- 1/2 oz cocoa butter
- 1/4 cup powdered sweetener Swerve Confectioner's
Whisk together the almond flour, cocoa powder, and powdered sweetener in a large bowl.
In a medium-sized bowl thoroughly combine the melted butter, almond butter, and your choice of extract until no lumps remain.
Pour the butter mixture into the dry ingredients and combine into a dough using a spatula by hand or a mixer.
Roll the dough into one inch balls and place on a baking sheet lined with parchment paper or a silicone baking mat. Place in the freezer for at least 30 minutes.
Meanwhile, prepare the chocolate coating. Melt the chocolate, cocoa butter and sweetener in a heat-proof bowl over a saucepan of boiling water.
Stir continuously until melted and remove from the heat.
Place the frozen truffle ball on a fork and dip it in the melted chocolate coating completely. Return the truffle to the baking sheet to harden and continue until all truffles are coated.
Place in the refrigerator to set.
