🦬 What is Buffalo sauce?
“So if it’s called Buffalo sauce, does it have anything to do with the buffalo or the American bison?”
This is the question my 9-year-old son immediately asked me.
No, the sauce is not made from buffalo, although you could probably put it on buffalo meat with a pretty tasty result.
Buffalo sauce is a type of sauce made from hot sauce and butter. Supposedly, the cofounder of a restaurant, the Anchor Bar in Buffalo, New York, created Buffalo wing sauce as a treat for her son and his friends one night.
They loved them, and the spicy chicken wings soon made an appearance on the restaurant menu.
As the story goes, not only did the family adore them but customers did as well, especially when served with celery sticks and bleu cheese dressing or sauce.

🍽 Equipment needed to make keto Buffalo sauce
All you need to make keto Buffalo sauce is a small saucepan and a whisk. That’s pretty much it! Well, that and a jar to store it in.
🥘 Ingredients in low carb buffalo sauce
The ingredients in keto Buffalo sauce are simple and few. You likely already have most, if not all, of what you need on hand! With just a few ingredients and just a few minutes, you’ll have the base for all sorts of keto recipes in no time.
- 1 cup unsalted butter
- 2 tsp garlic granules (or garlic powder)
- 1 cup hot sauce – I use Frank’s hot sauce (RedHot Original).
- 1/4 tsp salt
🫑 Optional ingredients
- 1/4 tsp Worcestershire sauce – optional for flavor
- 1/4-1/2 tsp red cayenne pepper – optional – This is how you can adjust for your preferred spice level, or that of others in the family. Without the extra cayenne, the sauce still packs a punch, but it’s one both my daughter and I can handle. If you want the spice kicked up a notch, add more cayenne and/or hot sauce.
- 1/2 tsp smoked paprika – Some people like to add a smoked paprika to Buffalo sauce. While it is not in the traditional recipe, it does add a nice flavor. If you want to try it, start with 1/4 teaspoon of smoked paprika, whisk it in and add more from there until you get the flavor you desire.
🌶 Kinds of hot sauces
Personally, I use Frank’s RedHot Original hot sauce, which is widely available in stores and is what my recipe calls for. It’s my husband’s favorite as well, for both the cayenne pepper taste and the heat.
Frank’s RedHot Original
Frank’s is a vinegar-based hot sauce, made with aged cayenne peppers. If you can’t find it or would prefer not to use it, most hot sauces will work just as well, such as Texas Pete Hot Sauce.
Tobasco
Tabasco is a good option but with a slightly different flavor result. It’s made with tabasco peppers, distilled vinegar, and salt. I’ve used it in a pinch and it was just fine with more of a vinegar flavor and hotter spice.
🔪 Instructions: how to make homemade Buffalo sauce
First of all, let me just say that this keto Buffalo sauce is seriously easy to make.
Like 10 minutes max easy.
You’re going to love it!
⏲ Cook time
To start, place a small saucepan over medium high heat.
Then, add in the unsalted butter, hot sauce, garlic granules (or garlic powder), salt, and Worcestershire sauce (if using).
Continuously stir the ingredients all gently until the butter melts, the cook time about 5 minutes or so. Once the butter is melted and the sauce just begins to bubble, remove it from the heat.
Taste test for spice
Now’s the time to taste the sauce. If you want it a bit spicier, add cayenne pepper to taste.
After that, if the melted butter separates at all, it just means you need to whisk until everything is blended together well. Whisk well.
And tada! That is it!
Use the hot buffalo sauce immediately for low carb chicken wings, or pour it into a glass jar and store it in the refrigerator until ready to reheat and use.

Buffalo sauce can last in the fridge for up to 2 weeks. You should store it in an airtight container so that it doesn’t absorb any smells from the fridge.
