First Impressions

From the moment I walked in, I knew it was going to be a special evening. I was pleasantly surprised to be led back to a private room, elegantly designed with comforting and unique decor. The setup was perfect for a hands-on cooking experience, complete with individual student cooking spaces and a large, inviting dining table where we would later eat and enjoy the fruits of our labor.

Making Sofrito

Ingredients and Preparation: Our culinary adventure began with sofrito, the flavorful base of many Puerto Rican dishes. We gathered key ingredients: garlic, onions, sweet green peppers, cubanelle peppers, culantro (or recao, similar to cilantro), and oregano. This mixture gave me a bit of a workout as we smashed everything together with a pestle and mortar!

Ingredients and Preparation: The ingredients list was long but oh-so-worth it: masa made from green plantains, pork, peppers, olives, and a variety of spices. We wrapped the mixture in banana leaves, creating little packets of deliciousness. I was interested to hear local families often make these for their Christmas dinner!

Hands-on Experience: Making pasteles was a highlight, full of laughter and learning. Not all our pasteles turned out quite as perfect as Manuel’s grandmother would have liked. Some had banana leaf lines, others were tied too tightly in the middle, causing them to break and look a bit more hourglass-like. But we had fun, and they tasted delicious no matter how they looked! The best part was getting to eat the pasteles we made, savoring the joy of dining on our own creations.

Pernil Rostizado (Roasted Pork Leg)

Marination and Cooking: The secret to pernil rostizado is in the marinade. We rubbed the pork leg with a mixture of garlic, oregano, and annatto oil (special red oil made with local traditional annatto seeds), and orange juice then let it sit to soak up all the flavors. The cooking process was slow and steady, ensuring a juicy and flavorful result.

They had one already marinated and cooking for us ready to go! 😂 I assume ours was eaten later!

Cooking Techniques: We learned to sauté the sofrito with the sausage, then add then add the rice to brown slightly before adding chicken broth, pigeon peas, annatto oil, and other ingredients, letting it all simmer together. This technique infused every grain with delicious flavor.
