On the third day of Christmas, my true love gave to me!
Today it’s cookie number three in the 12 Days of Keto Christmas Cookies! First, let me tell you I absolutely love gingerbread cookies and creating that all important gingerbread house with the kids. True, making a gingerbread house and decorating it with all the colorful candy and sugar icing lets the creativity flow, but do I want to eat it? Well, not really. That’s why I’ve created this fabulous keto gingerbread cookies recipe, just so you have something to snack on while you make the elaborate Hansel and Gretel style gingerbread house creation. Or possibly it’s just because I really like the spice of keto gingerbread cookies!

Kids Christmas Books: Family Traditions
I guess I’m a teacher at heart because when I hear the words keto gingerbread cookies, my mind automatically goes to the story associated with the gingerbread man. One of my favorite things to do at Christmas is to pull out and read all the classic kids Christmas books at bedtime throughout December. In addition, they’re great to act out or get our own traditions from! So, here are a few of our favorites, and I’d love to hear your suggestions for kids Christmas books.
Our favorite kids Christmas books
First of all, it’s fairly obvious when it’s time to pull this book out to read! When the kids and I make the keto gingerbread cookies or anything gingerbread, we pull out this classic read by generations. “You can’t catch me I’m the gingerbread man!” I remember my grandaddy reading this book to me, and we love it still.
This book is a classic from my childhood, which makes it harder to find! The creatures of the forest decorate a tree in hopes Santa will see it and stop to bring presents for little Nina and Nutley. Certainly, it’s a cute story and one I look forward to reading every year.
Bear can’t be snoring when it’s Christmas! He has to stay up for all the festivities with his friends! My son loves all the Bear series books, and what better than to have one set for Christmas?
This is the classic, and of course, we have dino versions, Sesame Street versions, and all sorts of other variations on the Clement Moore poem. However, it’s necessary to read the original before bedtime. The kids also love to act it out as it’s read!
Last but not least, you know we have to get our Dr. Seuss in! We love the cartoon, but it’s also fun to read the original book together. For a change have one of the kids read it to you and challenge them to do all the voices!
Run, run as fast as you can. You can’t catch me, I’m the gingerbread man!
To make these keto gingerbread cookies you’ll need:
- a large bowl
- hand or standing mixer (I prefer the standing mixer for these but either will work)
- a spatula
- cookie baking pans
- parchment paper or silicone baking mats
- cookie cutters (gingerbread men or trees, etc.)
- zipper bag
It is Christmas in the heart that puts Christmas in the air.
How to make keto gingerbread cookies
To begin, get out all your ingredients and be sure your butter is softened and eggs are room temp. Then take a large bowl and beat together the butter and sweetener. Actually, you can use any of your preferred sweeteners, but I like to use Brown Swerve in this recipe. Because it’s not available everywhere yet, I just order mine here on Amazon.
Next, add the eggs in one at a time, continuously beating everything together. Then, once everything is smooth, mix in the yacon syrup or blackstrap molasses, if you choose to use them. I prefer to use the yacon syrup, and I find it gives the cookies the traditional taste you would get in a non-keto recipe from the molasses or golden syrup.
Now for the dry ingredients
First, measure in the almond flour, baking soda, ginger, and cinnamon. Then, mix it slowly to combine everything together. Next, turn out the dough and knead it briefly until smooth on a clean, flat surface. After that, wrap it in plastic wrap, and chill it in the fridge for about 15 minutes.
Once you get the dough in the fridge, preheat the oven to 350 degrees Fahrenheit and line two baking sheets with parchment paper or silicone baking mats. Next, roll the dough out to about a 1/4 of an inch thickness on a lightly almond floured surface. Meanwhile, pick out the cookie cutters you’d like to use and cut out the gingerbread men shapes. Then place them on the baking tray, leaving space in between.
Now bake the cookies for 8-10 minutes, or until lightly golden-brown. Leave them on the tray for 10 minutes, but then move them to a wire rack to finish cooling. Be warned! If you don’t let them cool they can fall apart so don’t skip this step! Then, when completely cooled you can decorate them with the writing icing if you choose.
How to make the writing icing
To make the writing icing, first beat together the softened cream cheese, heavy cream, and sweetener for two to three minutes. Also, be sure to use a powdered sweetener such as Swerve confectioners. Then spoon the mixture into a zipper bag and snip off a very small corner of the bag. Use the hole in the bag to pipe the icing on the cookies as you like. Kids love to do this, and can I tell you a secret? They don’t have to be perfect so let them have fun decorating!
And that was the end of the gingerbread man!

Keto Gingerbread Cookies
- 4 oz butter softened
- 1 cup sweetener brown Swerve
- 2 eggs room temperature
- 2 tbsp yacon syrup (opt) (or blackstrap molasses)
- 1 tsp baking soda
- 2 tsp ground ginger
- 1 tsp cinnamon
- 2 1/2 cups almond flour finely ground
- 2 oz cream cheese
- 1 tbsp heavy cream
- 2 tbsp sweetener Swerve confectioner's
- Beat together the butter and sweetener.
- Add the eggs in one at a time, continuously mixing.
- Mix in the yacon syrup or blackstrap molasses, if using.
