- 1 tsp almond extract
Sugar Free Raspberry Jam
- 12 oz raspberries, fresh or frozen
- 1/4 cup powdered sweetener of choice (I use Swerve Confectioners)
- 1 tablespoon beef gelatin
- 1/8 tsp salt
Keto Amaretto Frosting
- 12 oz cream cheese, room temperature
- 3/4 cup unsalted butter, room temperature (12 tablespoons)
- 1 1/2 cups powdered sweetener of choice
- 1 teaspoon vanilla extract
- 1 teaspoon almond extract
- 1/8 tsp salt
- 1/4 cup heavy cream
- 1 1/2 tablespoons Amaretto liqueur (optional)
- Fresh raspberries
- Sliced almonds
Keto Cake Box Mix Sponge Cakes
- Preheat the oven to 350°F (175°C).
- Grease and line two 8-inch round cake pans with parchment paper. Set aside.

- Cook, stirring occasionally for several minutes, and smash the raspberries down with the back of a spoon. Once the raspberries are broken down and the mixture is thick and jammy, set aside to cool.
Keto Amaretto Frosting
- To make the Keto Amaretto Frosting, combine 12 oz cream cheese, 3/4 cup unsalted butter, 1 1/2 cups powdered sweetener, 1 teaspoon vanilla extract, 1 teaspoon almond extract, and 1/8 tsp salt in a large mixing bowl. Beat the mixture with an electric mixer until smooth and creamy.
- Add 1/4 cup heavy cream and continue to beat the mixture until it is light and fluffy.
- Add 1 1/2 tablespoons of Amaretto liqueur (if using) and beat until well combined.
Keto Cake Assembly
- Once the cakes have cooled, carefully flip one out of the pan onto a serving plate or cake stand.
- Spread a small layer. of frosting over the first layer. Create a lip of frosting around the edge to hold in the jam.
- Spoon the cooled sugar free raspberry jam evenly on the cake in the the well made by the frosting. Do NOT do this while the jam is still hot or it may run down the sides.
- Carefully place the second layer of the cake over top.
- Spread the frosting over the top and sides of the cake using a spatula or butter knife.
- Decorate the cake with fresh raspberries and sliced almonds.
Homemade Keto Cake Ingredients:
- 1/2 cup butter, softened
- 1 cup sweetener, (I use Swerve Confectioners)
- 1/2 cup heavy cream
- 4 eggs, room temperature
- 1 tsp almond extract
- 1 tsp vanilla extract
- 2 cups almond flour
- 1/2 cup coconut flour
- 2 tsp baking powder
- 1/4 tsp salt
- 1/2 cup unsweetened almond milk
Line two 8 or 9 inch round cake pans with parchment paper. Butter the pans and set aside.
Whisk together the dry ingredients in a large bowl. Set aside.
In a high speed blender or stand mixer, blend together the butter sweetener, heavy cream eggs, extracts, and almond milk. Add wet ingredients to the dry and mix thoroughly until no lumps remain.
Bake at 350 for 30-35 minutes. Let cool completely.
