🍽 Equipment needed to make chocolate peanut butter bark
The first and most obvious kitchen item you’ll need to make a low carb chocolate bark, is a baking sheet. I line mine with parchment paper so the keto chocolate peanut butter bark will slide or peel right off when it’s time to break it into pieces.
Next, you’ll need a double boiler or a heat-safe bowl that fits snugly over a saucepan filled partway with water. The water should not touch the bottom of the bowl.
- a large bowl
- whisk
- a spatula
- spoon and knife
- smaller heat-proof bowl – glass bowl, a microwave safe bowl is best
- small saucepan or a double boiler
- cookie baking pans/baking sheet
- parchment paper or silicone baking mats

Peanut Butter Mixture
- 1/2 cup unsweetened creamy peanut butter (natural peanut butter) – When you buy peanut butter read the ingredients! Make sure you get a good sugar free peanut butter, organic if possible. I LOVE peanut butter, and you can read more about the lowest carb peanut butter brands if you wish!

What is cocoa butter?
Cocoa butter is the edible, natural fat of the cacao bean. It’s what gives chocolate its smooth texture and melt in your mouth deliciousness.
You can find cocoa butter in health food stores, online (I usually buy the Wild Foods Cocoa Butter), or even some grocery stores now have started carrying it. I’ve seen it at Walmart and Kroger.
I love the stuff for those reasons but also because it’s gluten free and can you believe it has no carbs!? Yes, that makes me happy indeed!
Why cocoa butter?
Cocoa butter helps to give the keto chocolate peanut butter bark a nice firm texture. Peanut butter alone or with coconut oil would make the keto chocolate peanut butter bark too soft and it would be difficult to bite into.
🔪 Instructions: how to make keto chocolate peanut butter bark
Start by adding water to a saucepan and setting it over medium heat. Place a heat-safe bowl on top, making sure the bottom of the bowl does not touch the water.
Next, line a baking sheet with parchment paper. I like to spray some oil directly on the pan then place the parchment paper so it stays in place.
Chop the baking bar or dark chocolate chips and cocoa butter to melt more easily.
Now, in the heatproof bowl set over the pan of simmering water, melt the unsweetened chocolate and cocoa butter. Stir it occasionally until smooth, and it looks sort of like a chocolate drizzle.
Can you use already sweetened chocolate?
If you wish to use an already sweetened chocolate such as Lily’s or The Good Chocolate, you can use dark chocolate chips or chop up a baking bar. Just follow the same instructions for the melted chocolate mixture and don’t add extra sweetener.
Then remove it from the heat and whisk in the powdered sweetener, salt, and vanilla extract until smooth.
🍫 Low carb chocolate layer
Once the melted chocolate mixture is ready, pour it onto the prepared baking sheet and spread it out into a thin rectangle using a butter knife or icing spatula. Freeze it to harden for about 15 minutes, or just until it firms up.
🥜 Peanut butter mixture
Meanwhile, prepare the peanut butter layer.
In a medium bowl, mix together the natural peanut butter (organic if possible!), powdered sweetener, vanilla extract, and salt until smooth.
Next, melt the cocoa butter, again in a heatproof bowl set over a pan of simmering water, stirring occasionally until smooth and fully melted.
Then, once it’s completely melted, add the cocoa butter to the peanut butter mixture and stir until smooth.
Assembling keto chocolate peanut butter bark
Now that both parts are ready, pour the peanut butter mixture over the chocolate layer and spread it evenly over the rectangle.
Next is the fun part! What are our last remaining ingredients?
Sprinkle some chopped roasted salted peanuts over the peanut butter layer.
And then, if you are like me, you like your peanuts to be pretty salty, sprinkle the entire thing with sea salt as desired. Then freeze for 15 minutes, or until firm.
Break the bark!
Once the keto chocolate peanut butter bark has hardened, break it into about 24 equal sized pieces and enjoy!
I love chocolate and the low carb choc bark pieces are the perfect sweet treat. This delicious chocolate and peanut butter recipe is gluten free, dairy free, and has no added sugars!
🥣 How to store keto peanut butter bark
I like to store mine in the freezer because I think it tastes best when it’s really cold. But you can certainly keep it stored in the refrigerator in an airtight container for up to 2 weeks.
💭 Top tip
If you have trouble getting the keto chocolate peanut butter bark to break evenly, place it back in the freezer for 5-10 minutes, and then try again.
🌰 Can you use almond butter or other nut butter?
Yes, you can use a different nut butter in place of the peanut butter in this easy recipe.
I’ve tried it with almond butter and it’s delicious! In that case, I would sub a half teaspoon of almond extract and then add vanilla (1/2 teaspoon). There is no need for almond flour, just almond butter.
However, peanut butter is definitely my favorite!
