Yes, I’d been on the hunt for a while for a keto sandwich bread that’s not only low carb but also nut-free and dairy-free.

Most chaffle recipes have coconut flour or almond flour, but I really wanted a go-to keto bread without those two ingredients.

I’m so excited about the results of this wonder bread chaffle recipe! Not only is the result zero carb, but dairy-free also (no cream cheese or sour cream!).

These little guys are perfect for packing in lunch boxes or taking on the go. And they freeze well, too, so meal prep is a breeze with my favorite little mini waffle maker.

A wonder bread chaffle is a keto sandwich bread made in a mini waffle maker with just a few ingredients. Basically, it’s a white bread keto chaffle.

This particular wonder bread chaffle recipe is a little different than a lot of the other wonder bread chaffle recipes out there.

Um, it’s a cheeseless chaffle! Yep a bit different than traditional chaffles.

Yep, it’s dairy-free, nut-free, and low in carbs, making it a great option for those on a ketogenic diet or people with certain food allergies.

It’s quick and easy to make, and the results are delicious!

It is fairly easy to make a gluten free wonder bread chaffle

Let’s take a look at the macros. In this recipe for sugar free wonder bread chaffles, one serving is one chaffle. One has 103 calories6 grams of protein, 8 grams of fat, and 0 grams net carbs per serving. Yes, you read that right, this chaffle has ZERO carbs per serving.

The first and most obvious kitchen item you’ll need to make this wonder bread chaffle recipe is a mini waffle maker. I have this one, but any brand will work.

That’s it! So let’s get to the recipe.

🥘 Ingredients in low carb wonder bread chaffles

  • 2 large eggs (whole egg or you may sub three egg whites)
  • 2 tablespoons homemade mayo or sugar free mayonnaise
  • 2 tablespoons egg white protein powder (It’s Just Egg White Protein That’s It! is what I use)
  • 1/4 tsp baking powder
  • 1 tablespoon water
  • 1 pinch salt

🔪 Instructions

First of all, to make white bread chaffles, start out by preheating the mini waffle iron/waffle maker. Again, I like the size of the DASH Mini Waffle Maker, and it’s what I’ve used for several years now.

Then crack the two large eggs into a medium sized bowl and whisk them together well.

After that, add in the mayonnaise, protein powder, baking powder, water, and salt. Continue to whisk everything until it’s all an incorporated chaffle batter and no lumps remain. Also, the protein powder can take a minute or two to mix in completely so just be patient and keep whisking.

Now’s the fun part! Add 1/4 of a cup of batter to the waffle maker and cook for 3 minutes.

Remove the chaffle from the dash waffle maker (or regular waffle maker), I use a fork to pop it up and out. Then repeat for the second waffle and continue the process until you have 4 total chaffles.

You can use the wonder bread chaffles immediately for sandwiches or save for later.

🥣 How to store a wonder bread chaffle

You can store a wonder bread (white bread) keto chaffle in an airtight container in the fridge for up to a week or in the freezer for up to 3 months. When you’re ready to eat, just pop them in the toaster, toaster oven, or microwave to reheat.

If you’re meal prepping, I recommend making a batch of wonder bread chaffles at the beginning of the week and storing them in the fridge or freezer.

I like to freeze chaffles in a stack with parchment paper in between each one in an airtight freezer bag.

Then you can just grab one (or two) whenever you need a quick and easy low carb diet approved lunch or snack on the go.

🥚 Does it have an eggy taste?

One of the first questions from my very picky daughter was whether or not the sandwich bread recipe would have an eggy taste.

Sometimes she can be very tricky to please as she doesn’t like the taste of coconut flour or really anything with a coconut taste. If I do add in coconut flour and she can taste it at all she will avoid it.

Personally, I also wanted a keto wonder bread chaffle recipe that did not need to add almond flour or cheddar cheese, cream cheese, sour cream, or any dairy.

Perhaps relying on egg ingredient variations was a little risky for this keto wonder bread recipe, but let me tell you, it works!

It may have a little bit of an egg flavor, but these keto chaffles have been given a big thumbs up by my taste testers. Even my very picky daughter puts them in her school lunch!

🧇 Variation: the best easy keto waffle recipe

Can I tell you a little secret?

I use this same recipe with just a couple more ingredients for fabulous zero carb keto waffles. In fact, I absolutely love these things for breakfast and how easy they are to make.

Simply follow the same recipe, however, I add 1 teaspoon of vanilla extract and a tablespoon of powdered keto friendly sweetener to the batter. Personally, I just Swerve Confectioner’s, but use your favorite.

Cook it for the same amount of time in the mini waffle maker, top with butter and your favorite sugar free syrup, and enjoy!

🙋‍♀️ How to use a keto wonder bread chaffle

Wonder bread chaffles are fabulous for a low carb diet and the keto recipes and possibilities are endless! I really do love keto chaffles.

🥪 Keto sandwiches

The first idea is pretty obvious, for making sandwiches! Add some good sliced turkey or sugar free ham, lettuce, onion, mustard, or even cheese if you’d like. Bam! Lunch.

🍕 Personal pizza crust

The wonder chaffle bread also makes a fabulous personal pizza crust! Top with some keto diet approved pizza sauce, maybe a little garlic powder, mozzarella, and your desired toppings. Yum!

Keto French toast

My third favorite way to use these is in French toast. Mix an egg with a tablespoon of powdered keto sweetener such as Swerve Confectioners, 1 teaspoon vanilla extract, half a teaspoon of cinnamon, and a pinch of salt. Then all you have to do is dip the chaffles in the mixture and fry them on medium heat pan coated with non stick spray (I prefer avocado oil spray).

🍔 A gluten free hamburger bun

These babies are also good to use as a hamburger bun. Just pop them in the toaster oven until crisp or grill them on the stovetop.

🧁 Dessert chaffles

You can definitely get creative with the flavors and sweeteners when you experiment. Try all sorts, lemon poppyseed, chocolate, or strawberry, and throw them in the waffle maker and cook! It’s fun to get creative with dessert chaffles.

🥯 Everything bagel chaffles

One of the easiest keto snacks to make is to take one of these keto waffles and top it with cream cheese and everything bagel seasoning. I get mine at Costco, but you can make your own seasoning or find it at many grocery stores.

  6. Add 1/4 cup batter to the waffle maker, close, and cook for 3 minutes.
  7. Remove the chaffle and repeat the process until you have 4 chaffles.
  8. Use immediately for sandwiches or store in an airtight container in the refrigerator.

Notes

Blender option: When I'm in a hurry and don't want to or doubling the recipe, I use a blender instead of whisking in a bowl. Place all ingredients in a blender and blend from low to high for about 40 seconds or until everything is well combined. Continue to cook in the mini waffle maker as directed.
