Why quiche keto style?

As a mom, it can be hard to find time to cook healthy meals for my family. That’s why I love this keto-friendly quiche recipe – it’s one of my easy keto recipes to make and everyone loves it!

The keto quiche is packed with protein and fiber, making it the perfect breakfast or lunch option. Plus, the sausage and kale add a delicious depth of flavor that everyone will love. Give this quiche a try – I promise you won’t be disappointed!

What is quiche and how do you make it keto?

Simply put, a quiche is a savory custard pie that is typically made with eggs, milk, and cheese. The key to making a keto quiche is to swap out the traditional ingredients for keto-friendly substitutes.

For this recipe, I make it simple by leaving off the crust and using almond milk and heavy cream to keep it low carb. Also, many traditional quiches have fillers like flour, corn starch, or potato. When you make your own you can be sure those ingredients don’t make it into your quiche.

Sausage and Kale Quiche: keto macros

The great thing about this recipe is that there are so many variations you can make – make a keto quiche lorraine, add more or fewer veggies, swap out the meat or kind of cheese, spice it up with some jalapeno peppers, or add a dollop of creme fraiche on top. The possibilities are endless!

This recipe for keto quiche with sausage and kale makes eight servings with 280 calories each, 16 grams of protein, 23 grams total fat, and only 2 grams of carbs (2 net carbs also).

These macros are figured with MyFitnessPal, with the specific ingredients I personally use in the recipe. I do recommend figuring your own macros with the exact items you use if you vary them at all. It’s especially important to determine your own if you’re keeping close track and want to be accurate.

🥧 Why no keto pie crust?

There are times when I do take the time to make a simple almond flour keto quiche crust. I mix up 1 and 1/2 cups of finely ground almond flour, 1/4 a teaspoon of salt, and 6 tablespoons of melted butter.

Mix it all together well and dump it in the pie pan. Then pat it down and form into your basic crust shape. Bake it at 325 degrees F for 20 minutes.

Again, why do I usually make the quiche crustless? Well, first off, it’s easier! And secondly, it definitely cuts down on the carbs!

Obviously, the better quality ingredients you have, the better your recipe will turn out! I always recommend using organic, pasture-raised eggs and high-quality meats whenever possible.

Also, use a block and grate your own mozzarella or whatever cheese you choose. When you buy the pre-shredded kind, there are often anti-caking agents and other added stuff that adds carbs and is just not necessary.

In order to make this deliciously easy keto quiche recipe, it’s important to, first of all, get yourself organized. Set out all the equipment and ingredients you’ll need to make the recipe.

Don’t forget the glass pie plate! In a pinch, you can always use a tart pan or other pie dish.

Secondly, preheat the oven. Set the oven temperature to 350 degrees F.

Once the basics are done, go ahead and brown the breakfast sausage in a large skillet over medium-high heat. As it cooks, break up the pieces with a wooden spoon or spatula, for about 5-7 minutes.

Next, drain and save the excess fat if you wish. Use a pastry brush (or your hands work if it’s not too hot) and brush the glass pan with the grease so the quiche does not stick. Alternatively, you can use a spray olive oil or coconut oil for this task.

Then be sure to safely discard or keep the remaining melted fat for another recipe.

Now, spread the browned sausage evenly on the bottom of the pie plate.

After that, evenly cover the meat with chopped kale (or make it a keto spinach quiche). Then top it with half of the shredded cheese over the kale (1/2 cup – keep 1/2 cup cheese to sprinkle on top).

💭 Picky kids? Top tip: how to hide the kale or spinach

If you happen to have picky kids like I do, there are some things you can do to make it more kid-friendly. I suppose the first option is to just leave out the kale as my daughter would prefer.

However, I want the kale in there! If your kids won’t eat the quiche with pieces of kale in it, hide it!

How?

Well, when it’s just for me I prefer the basic chopped kale in the quiche. But for my kids, I put the kale in the blender with the eggs, almond milk, heavy cream, salt, and pepper. Simply blend it all up on high until there are no visible pieces of kale left.

Pour the egg mixture over the meat and continue with the recipe.

Back to the regular keto quiche recipe

Take a large mixing bowl and whisk together the eggs, cream, almond milk, garlic, salt, and pepper. (OR as previously mentioned, I also like to use a high-speed blender.)

Then gently pour the mixture over the sausage, kale, and cheese. If the kale sticks up out of the custard, press it down with a spatula or the back of a wooden spoon. This will help coat the kale and keep it in the quiche.

Now, sprinkle it all with the remaining shredded cheese and bake for 30-35 minutes or until the middle is set.

Let it cool and set for at least 15-20 minutes, although I prefer half an hour. I like to say we let the quiche rest for a while!

Cut the cooked quiche into eight portions and then, if desired, top with a dollop of sour cream and serve!

🥣 How to store keto quiche

This delicious low carb quiche recipe is best served fresh. However, if you have leftovers, cover them in an air-tight container, and store them in the fridge for 3-4 days.

To be honest I love to make the quiche ahead and have it ready to go to warm up for a quick keto diet meal.

You can also freeze keto quiche! Simply wrap each slice individually in plastic wrap or place the whole quiche in a large freezer bag. Freeze for up to 2 months.

This easy keto quiche recipe is crustless, packed with protein, and full of comforting flavors. With sausage, kale, and mozzarella cheese, it’s a perfect make-ahead breakfast or brunch dish that can be enjoyed hot or cold. I regularly make it as a kid-friendly dinner too!

  5. Evenly cover the meat with chopped kale (or spinach). Then do the same with half of the shredded cheese on top of the kale (1/2 cup - keep 1/2 cup cheese to sprinkle on top).
  6. Take a large mixing bowl and whisk together the eggs, cream, almond milk, garlic, salt, and pepper. Gently pour over the sausage, kale, and cheese. Press down the kale with a spatula or the back of a wooden spoon to coat if it's sticking out.
  7. Sprinkle it all with the remaining shredded cheese and bake for 30-35 minutes or until the middle is set.
  8. If desired, top with a dollop of sour cream.
