Childhood memories of pot roast
I was always the helpful kid in middle school. I was the one who would agree to help everyone out, whether it was helping a friend with their math homework or lending a hand to a neighbor.
One particularly elderly lady at church often had me come over to her house and help her vacuum her carpets when needed. She had a very specific way she wanted the job done, with her fancy extremely heavy vacuum with water that had to be dumped, and would stand next to me while I went over each section of carpet three times, very slowly!!
As a reward, she would feed me an unseasoned beef roast she’d cooked for hours along with mushy carrots. She meant well and to be kind, but oh I remember it was more difficult to get that pot roast down and smile than clean all the carpets!
Can I give you a little tip? It’s very important to season your meat and get a good flavorful crust on your air fryer beef roast!
🤔 What is a beef chuck roast?
A beef chuck roast, also known as a shoulder pot roast, is a cut of beef from the shoulder of the animal. It has both lean and fatty parts, giving it a rich flavor when cooked.
The chuck roast can be cut with the bone still in or removed and can be used to make slow-cooking dishes such as roasts, stews, braised dishes, and pot roasts.
It also makes an excellent addition to soups or casseroles because of its tenderness when cooked for long periods of time. In general, when I have any leftover air fryer pot roast, the next day it morphs into a stew.
When cooking a chuck roast in an air fryer, you should use high heat to quickly sear the outside of the roast while keeping the inside juicy and tender. This will lock in all the wonderful flavors from marinades or seasonings that you use so that your dish comes out tasting delicious!
🙋♀️ Is an air fryer chuck roast keto or low carb?
Yes, an air fryer chuck roast can easily be made keto or low carb! All you need to do is make sure your seasonings and ingredients are fresh without any added ingredients like sugar or fillers that add carbs.

🥘 Ingredients in low carb air fryer chuck roast
Beef chuck roast
When selecting a chuck roast, look for a cut that is well marbled with fat. This will help to keep the beef roast moist and flavorful during cooking. I buy my meat from ButcherBox and am always impressed with the quality, and the fact it comes straight to my door! Avocado oil or extra-virgin olive oil
Avocado oil or extra-virgin (light) olive oil are both good choices for this recipe. Look for an oil that has a high smoke point so that it can withstand the high heat of the air fryer.
Tamari or coconut aminos
Again, either can be used in this recipe. Both are gluten-free soy sauce type options to add flavor to the roast.
Worcestershire sauce
This is a savory condiment that can be used in this recipe. It is made with vinegar, anchovies, and other spices.
Garlic granules or garlic powder
Can be used to add flavor to the roast. Choose a product that is fresh and organic and has a strong flavor.
Onion granules or onion powder
Can be used to add flavor to the roast. Again, select a product that’s not been in your spice cabinet for 5 years, but fresh and good quality.
Dried thyme
This is an herb that can be used to add flavor to the roast. Thyme is a fragrant herb that is used in many different recipes and dishes.
Dried rosemary
This is an herb that can be used to add flavor to the roast. Rosemary has a woodsy and earthy flavor that can really enhance the flavor of the chuck roast.
Sea salt
Used to season the roast. Look for a sea salt that has no additives or anti-caking agents.
Black pepper
Can be used to add flavor to the roast. Freshly ground black pepper will have the best flavor, but pre-ground can be used as well.
Once all the ingredients have been gathered, it’s time to get cooking! This air fryer chuck roast is incredibly simple and easy to make.
🔪 Instructions: Can you roast meat in an air fryer?
Welcome to air frying! Yes, if you air fry meat, it’s a great way to get a juicy, tender chuck roast that’s full of flavor with a delicious crust. And all this without spending hours in the kitchen!
To start, preheat your air fryer to 390 degrees Fahrenheit for about five minutes.
While that’s going, in a small bowl, mix together the light olive oil, tamari, or coconut aminos for a soy-free option, Worcestershire sauce, garlic granules, and onion granules. Then add thyme for an herbal undertone of earthiness, black pepper for a slight kick of spice, salt to bring out the other flavors, and rosemary for that unmistakable classic taste.
Once it’s all combined in the bowl, use it to rub all over the chuck roast until it’s completely coated. This will make an air fryer beef roast with the most amazingly tender beef.
⏲ Cooking time: How long does it take to cook a 2.5lb roast in the air fryer basket?
Now you’re ready to put your beef roast in the air fryer basket.
How do you cook chuck roast? Set the timer to 15 minutes at 390°F and let it air fry away at the higher temperature to sear the outside crust.
After the first 15 minutes have elapsed and your kitchen starts smelling amazing from all the roasting goodness, flip over the chuck roast and reduce the temperature to 350°F. Now you continue the cooking process and air fry the air fryer beef roast for 45-60 minutes depending on its size.
When the internal temperature of your beef roast reaches 145–150°F (63–66°C) for medium-rare or 160–165°F (71–74°C) for well-done, it’s ready to come out of the air fryer. Let it rest for 10 minutes before slicing and serving warm with any side dishes you like best!
🍴How to slice the entire roast
To slice the entire roast properly, use either a sharp knife or an electric carving knife on a cutting board. Cut along the grain of the meat for thin slices that are easy to chew, and don’t forget to season with additional salt and pepper if desired.
Although, I admit I do cut larger slices out of the beef roast for convenience! I also like to garnish it with some sliced green onions.
The deep savory flavor of this air fryer chuck roast pairs perfectly with air fryer mushrooms, fried turnips (yes, I said fried turnips because they’re delicious and I don’t eat potatoes), or a hearty salad.
I hope you enjoy the crispy outer crust with tons of flavor! It’s an irresistibly crunchy exterior that’ll make everyone drool!
🙋♂️ Are air fryers good for roasts?
Absolutely! Air fryers are great for roasting all sorts of meats, especially chuck roast. Chuck roast is a cut of beef that comes from the shoulder area of the cow. It’s a tough cut of meat, so it can benefir from being cooked slowly over low heat to break down the tough connective tissue and produce tender, juicy meat.
I love it in the air fryer, but the pressure cooker (or Instant Pot) is also a good option for that intense cooking to produce fall apart tender meat.
🙋 Does chuck roast get more tender the longer you cook it?
Yes, chuck roast does get more tender the longer you cook it. As the connective tissue breaks down, the meat becomes more and more tender. But be careful not to over-cook it or you’ll end up with dry, tough meat! The key is to find that sweet spot between juicy, flavorful roast and dry, overcooked meat. With a bit of practice and patience, you can get the perfect roast every time. Bon appetite!
💭 Top tip: use your meat thermometer!
It’s the best way to ensure that you don’t overcook your roast, and a meat thermometer will help you get perfectly cooked meat every time.
🥣 How to store air fryer chuck roast
If you have leftovers, store them in an airtight container and keep them in the refrigerator for up to four days. You can also freeze your cooked chuck roast for up to three months. Just make sure it’s wrapped tightly in plastic wrap or aluminum foil before freezing to lock in all that moisture and flavor!
Also, as I mentioned before, I love to chop up any leftovers to make into soup or stew for the next day to mix things up a bit.
