I vividly remember the trips my family used to take from Colorado to Ruidoso, New Mexico as a child. We would drive the long stretch of highway and make stops along the way to take in the beauty of nature and to visit local attractions. I remember the signs along the road for Hatch green chiles and the local stands here and there in both states.

Now, while I’m a bit of a weakling when it comes to spice, I love green chiles and the flavor! Lately, I’ve been experimenting with different recipes and ingredients to create a delicious green chile queso dip.

So, after some trial and error, I’m proud to share with you my Green Chile Queso {Keto & Low Carb} Dip recipe! What’s great about this dip is that it can be made on the stovetop in fifteen minutes or less. What’s even better is that it’s low carb and keto friendly.

🌶 What are Hatch green chiles?

Hatch green chiles, also known as Anaheim, California, or New Mexico chiles, are a variety of mild to medium-heat peppers. They are grown in the Hatch Valley located in Southern New Mexico and are famous for their unique flavor. They offer just enough heat without being overly spicy. Roasted Hatch green chiles not only provide an amazing flavor to dishes but also add a wonderful smoky depth.

Preparing your green chiles for this dip can be done two ways: you can roast the chiles on your own or purchase them already prepared (fresh, canned, or frozen). Feel free to experiment with different varieties of pepper until you find one that you like!

Is green chile queso keto?

Yes! This queso cheese dip is keto and low carb friendly. It’s made with just 3 carbs per serving and is a great way to enjoy the flavors of roasted green chiles and cheese, and who can say no to that?!

Let’s take a look at the macros. In this recipe for green chile queso, one serving is pretty generous at 1/4 of a cup. This amount has 249 calories, 10 grams of protein, 21 grams of fat, and 3 grams carbs per serving.

🍽 Equipment needed to make keto queso with green chiles

This is a pretty simple recipe so you don’t need a lot of equipment, but it’s oh so delicious!

You’ll need a saucepan or cast iron pan, a cheese grater, a cutting board, and knife, measuring spoons/cups, a whisk or spatula, and a bowl to serve your dip in.

🥘 Ingredients in low carb green chile queso

Heavy cream

When selecting heavy cream, look for a brand that is grass-fed and organic if possible. This will ensure that the cream is of the highest quality and that it contains no harmful chemicals or pesticides. Also, be sure it does not have any added sugar or fillers.

Unsweetened almond milk

Almond milk should be unsweetened and unflavored. Be sure to check the label carefully to make sure that it does not contain any added sugars or flavorings.

Cream cheese

When choosing cream cheese, opt for a brand that is made from grass-fed cows, and again, read the label to be sure there’s nothing added that shouldn’t be there.

Onion granules (or onion powder)

Onion granules or powder can be found in the spice aisle of most grocery stores. Be sure to choose an organic variety if possible.

Garlic granules (or garlic powder)

Like onion powder, garlic granules or powder can be found in the spice aisle of most grocery stores. Again, try to choose an organic variety if possible.

Ground cumin

Cumin can be found in the spice aisle of most grocery stores. Oh, how I love cumin! Choose an organic variety.

Salt

Be sure to use a high quality salt such as Himalayan pink salt or sea salt when making this dip. Personally, I like to use Redmond’s Real Salt.

Shredded cheese, sharp cheddar

When selecting cheddar cheese, buy a good quality cheese in a block and grate it yourself. This prevents you from also getting the preservatives and anti-caking ingredients added to the pre shredded cheese. This is also why we don’t use processed cheese like American or Velveeta; we want real cheese, not filler ingredients!

Shredded Monterey Jack cheese or Colby Jack cheese

As with the cheddar cheese, be sure to choose a brand of Monterey Jack or Colby Jack that is made from grass-fed cows and does not contain any artificial ingredients or preservatives. Use a grater to make your own shredded cheese from a block. You could also use pepper jack for this.

Shredded parmesan cheese

The same goes for parmesan cheese as for the other cheeses. Find the best quality you can.

Roasted chopped green chiles

You can find roasted green chiles in most grocery stores, order directly from Hatch Green Chile, or stock up from the roadside roasted chile sellers in the fall. I love to have roasted diced chiles in my freezer!

Cayenne pepper (optional)

If the spice is not enough for you, get some fresh cayenne pepper. Add it in 1/4 of a teaspoon at a time and taste for desired spice level. Or you could also use hot sauce for this task as well.

🔪 Instructions for this keto queso recipe

This delicious Green Chile Queso Dip is sure to be a hit with everyone! It’s keto and low carb friendly, and you’ll love the rich cheesy flavor that comes from the combination of sharp cheddar cheese, Monterrey Jack cheese, and parmesan cheese.

To make it just right, start by heating some heavy cream and almond milk in a medium-sized saucepan over medium heat until hot but not boiling.

Then reduce the heat to low and add the cubed cream cheese, whisking continuously until melted.

💭 Top tip: blender shortcut

For a quicker option, blend all three ingredients together in a blender until smooth before heating.

Once the cream cheese has melted, stir in onion granules, garlic granules, cumin, and salt until well incorporated.

Then, increase the heat to medium-low and gradually add both the sharp cheddar cheese & Monterrey Jack cheese. Stir frequently until all of the cheeses are melted and combined with other ingredients.

Finally, for added flavor and texture, stir in some chopped roasted green chiles. Soooo good!!

After that, remove it from the heat once everything is evenly mixed together, and serve it warm.

Serve this amazing keto queso with your favorite low carb tortilla chips, pork rinds, crackers (I prefer a good low carb option!), or veggies for an amazing appetizer or snack that everyone will love!

🤔 Can you make low carb queso dip in the slow cooker or Crockpot?

Yes! To make this queso in a slow cooker, simply combine all the ingredients in the slow cooker.

Then, place the lid on top of the slow cooker and cook for 1-2 hours on low heat setting – stirring occasionally – until all the cheeses have melted and the dip is warm throughout. Keep the dip warm by turning the slow cooker to the “warm” setting and stirring every now and then during the big game!

Serve the queso warm with your favorite dippers!

Any leftover keto queso dip can be stored in an airtight container in the refrigerator for up to three days. Nom nom.

No, I do not recommend freezing this keto green chile queso.

Ingredients

  • 3/4 cup heavy cream
  • 1/4 cup unsweetened almond milk (more or less depending on desired consistency)
  • 4 oz cream cheese (cubed)
  • 1 tsp onion granules (or onion powder)
  • 1 tsp garlic granules (or onion powder)
  • 1 tsp ground cumin
  • 1/2 tsp salt
  • 2 cups (8 oz) shredded sharp cheddar cheese
  • 1 cup (4 oz) shredded Monterrey Jack or Colby Jack cheese
  • 1/3 cup shredded parmesan cheese
  • 4 oz roasted chopped green chiles

Instructions

  1. In a medium-sized saucepan, heat the heavy cream and almond milk over medium heat until combined and hot but not boiling.
  2. Once hot, reduce the heat to low and add the cubed cream cheese, stirring/whisking continuously until melted. Or, if you're in a hurry, start by placing the heavy cream, almond milk, and cream cheese in a blender and blend until smooth. Then heat as directed.
  3. Once the cream cheese has melted, stir in the onion granules, garlic granules, cumin, and salt until well incorporated.
  4. Increase the heat to medium-low and gradually add both the sharp cheddar cheese and Monterrey Jack or Colby Jack cheese while stirring continuously until all of the cheeses are melted and combined with the other ingredients.
  5. Add in the shredded parmesan cheese and chopped roasted green chiles, stirring continuously until everything is well blended together into a creamy dip.
  6. Remove from heat once everything is evenly mixed together and serve warm with your favorite low carb chips or vegetables! Enjoy!

Notes

If you prefer a thicker dip, add less almond milk or wait and add it at the end until you reach your desired green chile queso dip consistency.

Slow cooker/Crock Pot instructions:

  1. In a slow cooker set to low heat, add heavy cream, unsweetened almond milk, cubed cream cheese (small cubes), onion granules, garlic granules, ground cumin, and salt.
  2. Stir until ingredients are combined.
  3. Add the shredded sharp cheddar cheese, Monterrey Jack or Colby Jack cheese, and parmesan cheese and stir until incorporated into the mixture.
  4. Add the chopped roasted green chiles and stir again until fully combined with all other ingredients.
  5. Place lid on top of slow cooker and cook for 1-2 hours on low heat setting - stirring occasionally - until all cheeses have melted and dip is warm throughout.
    Serve dip warm with your favorite dippers!
