How did this come about?
I love pizza and Buffalo chicken, and if you follow my website you’ll notice I have quite a few Buffalo chicken recipes. Not long ago I was trying to decide what to do with some ground chicken, and I thought it would it not be absolutely amazing to turn it into a pizza with a chicken crust?
It would be super flavorful, with hardly any carbs if any, and the perfect way to enjoy Buffalo chicken wings taste in pizza form!
Who wouldn’t love that?
🦬 What is a low carb Buffalo chicken pizza?
I’m glad you asked!
It’s a delicious chicken pizza crust with melted mozzarella cheese, crumbled blue cheese and celery as toppings. The crust is easy and basic, made with ground chicken, parmesan cheese, and spices.
A Buffalo sauce is spread over the top of the cheese and other toppings before baking. This pizza recipe was a hit at my house, and I absolutely love that I can enjoy a slice, a whole meal really, for less than ONE carb.
🍕 Is Buffalo chicken pizza keto?
Yes! This recipe is keto-friendly since it contains less than one carb per slice and can easily be adapted to fit a variety of dietary needs. I say less than one carb, because the entire pizza only has 3 carbs with one gram of dietary fiber, and there are 10 servings!
So, if you eat a slice you are really eating .3 of a carb which I would round down to ZERO.
So go ahead and enjoy it without worrying about breaking your keto diet!
Plus, the Buffalo sauce gives a great flavor that everyone will love.
Macros: nutrition information
Let’s take a look at the macros. In this recipe for low carb Buffalo chicken pizza, one serving is one slice out of 10 for the entire pizza. A serving has 282 calories, 27 grams of protein, 21 grams of fat, and .3 grams of net carbs per serving.
The macros for my gluten free pizza are figured with MyFitnessPal, with the ingredients I use in the recipe. I always recommend figuring out your own with the exact items/brands you use. It’s especially important to determine your own if you’re keeping a close track of nutritional information and want to be accurate.
🍽 Equipment needed to make Buffalo chicken pizza
What do you need to make this pizza? Well, you’ll need the usual pizza making supplies like a baking sheet, parchment paper, and something to spread it out with.
Here’s a basic list:
- a spatula
- whisk
- large-sized mixing bowl
- measuring cups and spoons
- baking sheets or pizza stone
- nonstick silicone baking mat or parchment paper
What is the best pizza pan?
There are several options for how to bake a pizza dough crust. If you want a classic pizzeria-style pizza, I recommend using a baking stone or preheated steel pan. For Buffalo chicken pizza with chicken crust, I use a baking stone or an 18” x 13” cookie sheet.
Because this crust is made out of meat, more liquid will come off of it than a traditional crust. For that reason, I recommend a pan with sides to catch any liquid that might drip off or put a large pan under the baking stone or another flat pan.

Gluten Free Chicken Crust – homemade pizza dough
- 1.5 pounds ground chicken – I buy my ground chicken from ButcherBox
- 1/2 tsp sea salt
- 2 cups powdered parmesan cheese
- 1 large egg

Pizza Toppings
- 1/2 cup keto Buffalo chicken sauce (easy homemade or bought)
- 1 cup shredded mozzarella cheese (or more if you prefer)
- 1/3 cup blue cheese crumbles
- 1/2 cup sliced celery
Hot sauce
- Optional: Extra hot sauce – I use Frank’s red hot sauce for drizzling on top to add extra heat.
- Also optional: sliced green onions to garnish

Let’s begin by making the chicken crust.
🐔 Chicken pizza crust
First, start by preheating your oven to 425 degrees Fahrenheit (190 degrees Celsius).
Homemade pizza dough
While your oven heats up, gather together a few simple ingredients: ground chicken, sea salt, parmesan cheese, and a single egg. Once you have all these items on hand, mix them together in a large bowl until everything has combined into a uniform mixture.
Form the pizza crust
Next, take out a baking sheet and place parchment paper over it. Then spread the dough-like mixture onto the parchment paper in an even layer that is about 1/4-inch thick (about 0.6 cm).
It’s important to remember that the edges should be slightly thicker than the center so they don’t burn during baking.
⏲ Bake time
Now pop this tray into your preheated oven and bake for 12-15 minutes or until golden and cooked through. When done correctly, you should be able to lightly press down on the crust with your fingers and feel firmness – this means that it is cooked thoroughly!
Finally, remove your freshly baked crust from the oven and let it cool slightly while you prepare your toppings for your Buffalo chicken pizza.
Possible liquid on the pizza crust
If there happens to be any extra liquid on top of the crust then just drain it off and pat the top dry with some paper towels before adding anything else.
Buffalo chicken pizza toppings
Once the cooked chicken crust is ready, spread 1/2 cup of keto Buffalo sauce over the surface of the pizza, making sure it’s evenly coated all the way to within 3/4 of an inch around the edge.
Next, sprinkle 1 cup of shredded mozzarella cheese over the top and then finish off with 1/3 cup of blue cheese crumbles and 1/2 cup of sliced celery.
Second bake
Now, place it back in the oven for 8-10 minutes or until the cheese is melted and bubbly with a golden edge.
When finished baking, let it cool for 5 minutes before cutting the pizza into slices.
This gives you just enough time to set out some extra hot sauce for those who like their pizza extra spicy!
